Method
In a shaker, combine beet-infused vodka, grapefruit juice, and ginger syrup.
Beet-infused vodka 60 ml2 oz6 cl Fresh grapefruit juice 45 ml1½ oz4.5 cl House-made ginger syrup 15 ml½ oz1.5 clFill with ice and shake vigorously for 15 seconds.
Strain into a highball glass filled with fresh ice.
Garnish with a twist of grapefruit peel and a few microgreens on top.
