Ingredients: 60 ml Vodka; 5 ml Honey; 3 Figs; 1 sprig Thyme; 2 dashes Angostura Bitters; top up Tonic Water; Lemon Juice

Method

Pour ice into a highball glass, first crushing it in a Lewis bag.
Muddle the Figs and Thyme in a shaker.
Figs 3 Thyme 1 sprig
Add the Honey, Vodka, Lemon Juice and a large ice cube.
Honey 5 ml0.2 oz0.5 cl Vodka 60 ml2 oz6 cl Lemon Juice
Shake until well chilled and strain into the glass.
Pour in the Tonic Water, then add the Angostura Bitters.
Tonic Water top up Angostura Bitters 2 dashes
Garnish with sliced figs and thyme.
