The story
The Aviation cocktail was first created by Hugo Ensslin, head bartender at the Hotel Wallick in New York, around 1916. It gained popularity through the publication of Ensslin's cocktail book, where he included the recipe, but it fell into obscurity until the craft cocktail revival brought it back into the spotlight in the early 2000s.
